====== Classic Beef Stroganoff ====== {{https://natashaskitchen.com/wp-content/uploads/2019/04/Beef-Stroganoff-6.jpg?200|Classic Beef Stroganoff}} ===== Ingredients ===== Serves 4. \\ 1 lb top sirloin steak \\ 2 tbsp olive oil \\ 2 tbsp unsalted butter \\ ½ medium onion \\ ½ lb brown mushrooms \\ 1 garlic clove \\ 1 tbsp all-purpose flour \\ 1 cup beef broth \\ ¾ cup heavy whipping cream \\ ¼ cup sour cream \\ 1 tbsp Worcestershire sauce \\ ½ tsp Dijon mustard \\ ½ tsp salt, plus more to taste \\ ¼ tsp black pepper, plus more to taste \\ 1 tbsp chopped green onion or parsley, to garnish \\ 8–12 oz egg noodles, optional, to serve \\ ===== Tools ===== Large deep pan or Dutch oven \\ ===== Preparation ===== Cut the beef into thin strips across the grain. Finely chop the onion, thickly slice the mushrooms, and mince the garlic. \\ If serving with noodles, cook them according to their package directions. \\ ===== Cooking ===== Heat the olive oil in the pan over medium-high heat. Once very hot, add half the beef in one layer. Sear without stirring for about 1 minute per side, until browned and no longer red. Transfer to a plate and cover; repeat with the remaining beef. \\ Add the butter, onion and mushrooms to the pan. Sauté for 6–8 minutes, until the liquid has evaporated and the vegetables are soft and lightly browned. \\ Stir in the garlic and cook for 1 minute. Add the flour and stir continuously for another minute. \\ Pour in the broth and scrape up the browned bits. Add the cream and simmer for 1–2 minutes, until slightly thickened. \\ Mix a few tablespoons of hot sauce into the sour cream, then stir this mixture into the pan to prevent curdling. \\ Add the Worcestershire sauce, Dijon, salt and pepper. Simmer until creamy, adjusting the seasoning to taste. \\ Return the beef and its juices to the pan. Bring just to a simmer, until the beef is heated through. Garnish with green onion or parsley and serve with the noodles if using. \\ ===== Sources ===== [[https://natashaskitchen.com/beef-stroganoff/|Beef Stroganoff — Natasha Kravchuk, Natasha’s Kitchen (recipe and photograph)]] \\ [[https://www.youtube.com/watch?v=7r3dlmYUf4s|Easy Classic Beef Stroganoff — Natasha’s Kitchen]] \\
