1/2 tbsp mace
1 small nutmeg powdered
1 tbsp black pepper powder
2 tbsp white cumin powder
1tbsp ground coriander
1/2 tbsp small cardamom powder
1/2 tbsp chilli flakes
1 tsp kabab cheeni
1 tsp clove powder
1/2 tbsp Zafrani garam masala
1/2 tbsp basic garam masala
2 1/2 tbsp red chilli powder
1 tbsp Kashmiri red chilli powder
1 tsp cinnamon powder
3 cup mustard oil
1 cup yogurt
salt as per taste
2 tbsp Poppy seeds powder
5 medium-sized onion - fried and pasted with 2 petals of mint and 3 strings of coriander( no water)
5 medium onions paste
1 1/4 cup papaya paste
3/4 cup ginger paste
2 1/2kg beef Bihari kabab cut(long strips)
1.6 lbs beef
1 Teaspoon Salt
1 Tablespoon Red Chilli
1/2 Teaspoon Tumeric
1 Tablespoon powdered poppy seed
1/2 Teaspoon Cumin
1 Teaspoon White Pepper
1 Teaspoon Garam Masala
1/2 Teaspoon Shah Jeera Powder (Black Cumin Seeds)
1 Teaspoon Coriander Powder
1/4 Teaspoon Nutmeg
1/4 Teaspoon Mace
1/4 Cup Fried Onions
2 Tablespoon Papaya Paste
1 Cup Yogurt
1 Tablespoon Ginger Paste
2.5 Tablespoons Mustard Oil
Take a wide bowl and add the oil in which onions are fried
Add the meat and add onion paste and add half of the ginger paste
Add the fried onion paste and 1/2 of the poppy seeds powder with 1cup oil
Add all the dry powders and add 2tbsp salt and yogurt
Mix well and after half an hour mix the meat again
You can add masala if needed- marinate for 6 hours
After every 30 mins, keep mixing the meat
2 hours before you barbeque the meat, add papaya, leftover ginger paste, poppy seeds powder, and oil
Put the mean on the skewers as shown in the video
Grill them by placing them far apart from each other and keep applying ghee in between
Once cooked, plate the yummy grill as shown and enjoy it hot.
